Fall Fiber Treats

Hey, you! You deserve a treat, don’t you think? (We’ll assume you’re nodding in agreement.) If you’re looking to eat a dessert but want to make sure you’re not just packing in the empty calories, we have some great suggestions for you. Use a FiberLove bar to craft a tasty apple cinnamon dessert, a healthier version of the classic “Worms in Mud” concoction, or a personalized trail mix you can carry anywhere.

Cinnamon Raisin Treat

Mmmmm. This one is GOOD. So good, it’ll have you Raisin the roof (of your mouth) in excitement. (Pardon the pun. Couldn’t help it.) Pair a Cinnamon Raisin FiberLove bar with Trader Joe’s Speculoos Cookie Butter and some fresh, chopped up apple bits to give yourself a gift that you’ll savor with every bite. Seriously. This Cinnamon Raisin Treat is delicious. Using 1 tablespoon of cookie butter and a quarter of a medium apple, it clocks in at about 240 calories with 49% of your daily value of fiber. Not bad, huh?

(Speculoos Cookie Butter has a gingerbread-y taste. If you don’t have a Trader Joe’s nearby, Speculoos Cookie Butter is also available online, but it can be significantly more expensive. You can also make your own cookie butter.)

If you want to add some extra nutritional value (which cookie butter is pretty much devoid of), switch out the cookie butter for a nut butter of your choice. Almond butter pairs nicely with the Cinnamon Raisin bar, and peanut butter is always a reliable staple. Adding nut butter will boost the protein content of your treat while adding less sugar.

 

Worms in Mud

A healthier spin on the time-tested, easy and lovable “Worms in Mud” dessert. But this time, rather than using chocolate sandwich cookies to create the “dirt” for your worm to pop out of, break up a Chocolate Brownie FiberLove bar and sprinkle it on top of your chocolate pudding. Adding the chewy, fibery goodness of FiberLove will help to fill you up and leave your stomach satisfied.

Put your pudding in your dish first, then stick a gummy worm in there and top the pudding with a layer of FiberLove. Sure, it’s not the most appetizing of visuals, but it certainly tastes delightful.

We used 1/2 a FiberLove Chocolate Brownie Bar, 1 sugar-free chocolate pudding cup and 1 gummy worm to create this dish with 180 calories and 32% of your daily value of fiber.

 

Trail Mix

The great thing about trail mix is that it’s super easy to make on your own. We used a Peanut Chocolate Chip bar in our trail mix, but you can use whatever flavor your heart desires. (Blueberry Cobbler and Orange Cranberry are great options as well.)

The calorie and fiber counts in your trail mix will depend on the ingredients you use. Dried fruit and nuts provide additional fiber, and nuts pack in the protein as well. If you want to add some extra chocolate, throw in a few candy-coated pieces as well.

In addition to the Peanut Chocolate Chip bar, our mix contained raisins, dried cranberries, almond slivers, sunflower seeds, cashews, and candy pieces.
